A Fool for Foule

Thoroughly ME: black and white and brights

I have a new favorite food, folks. It's called foule, and on Friday the friendly people at the new Iraqi bakery and restaurant in town, Tandoor Bread, describe it as a variation on hummus made with fava beans. I love me some hummus, but this was 10 times better, with a much richer, deeper flavor. It had a soupy or stew-like texture and spread out to fill its paper plate. It was served warm, and a layer of olive oil pooled on top. I took some home and reheated it tonight, then scooped it up with flatbread for dinner. Freakin' fantastic.
